The Flat Iron Steak, also known as a Top Blade Steak, is a shoulder cut from prime beef stock. It has a significant amount of marbling, which makes the steak very tender – in fact, this steak is second in line in tenderness to the tenderloin cut!
The Flat Iron is similar to ‘Flat Steaks’, so any recipe calling for a Skirt or Flank Steak will be the perfect opportunity to try out the Flat Iron Steak. This cut is best grilled over a medium-high heat.
